Chocolate Chip Banana Bread

I've tried A LOT of different banana bread recipes. I used to live in Laramie, WY which had a high elevation of 7, 165 which made baking much different. I had to adjust every recipe, baking time, and baking temperature according to the high elevation. It took a ton of practice. I have also tested different recipes with different size bread loaf pans. I could only bake banana bread in mini loaf pans while living in WY. So, once I moved to VA, I was excited to start baking and testing different recipes without the problem of elevation coming into play. This recipe was a new one I tried on Friday since I had ANOTHER SNOW DAY (3rd day in a row!) My brother lives in Montana and I rarely get to see him. So, I try to send him little treats every once in a while and I was thrilled to actually use my big bread loaf pan! something I hadn't used in years! You could also add walnuts to your banana bread, most people enjoy them. My family loves chocolate and like chocolate chips in almost everything. Which is why I went that route. I loved that this recipe was super easy and VERY yummy! Enjoy!


Chocolate Chip Banana Bread

Ingredients




  • 5 Tablespoons butter, melted

  • 1/2 cup brown sugar

  • 3-4 ripe bananas, mashed

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 1/2 cup flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • pinch of salt

  • 1 cup chocolate chips




DIRECTIONS

  1. preheat oven to 350 degrees

  2. In a standing mixer or large bowl use a hand mixer to mix the melted butter and brown sugar until sugar is dissolved.

  3. Mash bananas with a fork and beat in with egg and vanilla extract.

  4. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

  5. combine wet and dry mixtures.

  6. fold in most of the chocolate chips, reserving a small handful.

  7. pour batter into greased loaf pan. Sprinkle with remaining chocolate chips on top.

  8. Bake for 45 minutes. Allow bread to cool and enjoy!
